1. Corned Meat in Tomato Sauce
Corned meat is stewed with tomatoes, onions, thyme, ginger, garlic and curry leaves to make this classic creole dish that has a nice depth of flavour.
Ingredients
- 1 can corned meat (lamb, mutton or beef)
- 4 tomatoes, chopped
- 1 small onion, sliced
- 1 tablespoon thyme leaves
- 2 curry leaves
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 small green chili
- 1 tablespoon spring onions
- 1 tablespoon coriander leaves
- Salt
- Pepper
- Oil
Instructions
- In a pan heat 2 tablespoon oil
- Add the sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
- Add the chopped tomatoes, garlic and ginger paste, chili and stir well
- Add a little water, cover and cook until the tomatoes are 1/2 done
- Add the corned meat and mash it
- Add salt to taste
- Cover and cook until tomatoes are completely done (add a little water if needed)
- Turn off the heat and garnish with chopped spring onions and coriander leaves
